What do these searches do: intitle, inanchor, intext?
They produce the same results as the regular SERP's, correct?
What can be done to optimize for them?

special searches, pointless looking at them specially for optimising, because the general searchers will never use them and if you optimise properly you should be naturally optimising those searches.
intitle: searches for the word(s) ONLY in the title tag
allintitle: searches for the combination of words (in order gets higher rank) in the title tag
inanchor: as intitle but searches anchor text
allinanchor: as allintitle but for anchor text
intext: body text,
you'll be getting the picture by now.
The real use for these in SEO are for estimating or assessing the actual competition for any given search term.

Why do the results for the intitle, inanchor, intext searches match the normal serp searches? The allin searches usually differ especially, in my case.

intitle:
Search will restrict the results with phrase in the title.
inanchor:
Search will restrict the results with phrase in the anchor text
intext:
Search will restrict the results with phrase in body text
... in some case it may be same to some extent ...
to see difference just check any keyword phrase by normal search and see "Results 1 - 10 of about ?,???,???"
and then search intitle:keyword phrase and then see "Results 1 - 10 of about ???,???"

You should not optimize your web pages for these searches, which general web users know little or nothing about. Optimize for normal searches and the most likely search phrases relevant to your industry. That's what ordinary mortals will use!

... A bit wrong. You have answered for allintitle, allinanchor and allintext
[intitle:web hosting] will return documents that mention the
word "web" in their title, and mention the word "hosting" anywhere in the document (no matter if hosting is present in title or not).
[allintitle:web hosting] will return documents that mention the
words "web" and "hosting" in their title.
Similar is the case with others
