I know that Title, text, keywords, description are all essential things to put on your pages. I have done that.
I have also heard a few other things may help, but I want to see from others out there if it's worth it ...Let me know.
alt tags for photos
comments tags
headers (what are these?)
site map

alt tags for photos : These are good. Just make sure you don't stuff them with keywords.
comments tags: These are useless. They are meant to help the webmaster read the source code. Search engine ignore them.
headers (what are these?): I am not sure what is meant by header. If you are referring to the <head> section of the site, that is where you put your meta tags and title tag.
site map: This is good for easy site navigation. Yes se will spider these pages. Please remember that this page should not be used exclusively for spiders. It should be for the visitor.

By "headers" i think u are talkin of titles of paragraphes insid your page. yes they are very important and u should put key phrases in it

A header is a piece of information that the browser gain before the acctually homepage starts to load. It contains info like when the page have been updated, it can also contain cache headers for images and the page that you are going to load so when you for example hit the back button you don't have to request the same page from the server again.

Headers: How much could these help in web ranking? Could anyone give an example, a site perhaps, that shows how they work?
Alt , or image tags, same thing, how do they compare with other things such as text etc, to help with page ranking?
Site map, lastly, how would this help you web pages rank higher?

Alt tags don't really help that much, but they are always good to use. My best advise is to use them the way they were meant to be used; description of pictures. Just make sure you use your keywords when you describe the picture.
Site map doesn't help with rankings, but it does help spiders find all your pages. This will result in more pages in the search engines. With more pages, you will have a better chance at getting better rankings.

When you talk about headers, are you talking about the tags that appear in the <HEAD> or are you talking about <H#>?
<H1>, <h2>, etc...place emphasis on the words used within these tags but do not weight heavily upon rankings...I use these tags more for organization of content which allows visitors to scan the content on each page...They may help a bit but not nearly as much as great content and links....

Headlines can be very effective for your SEO and your readers. These can nicely be put in the H1, H2 and H3 tags, as MSsearch has mentioned.
As to Alt tags, just using them for images on the page will have little effect on rankings, however, they can help a lot when they're used in clickable images. In other words, if you use the words that describe the page your clicking to, there can be a benefit. It's similar to having words in the hyperlink.
No one can really judge exactly how much any one thing you do in SEO will help your rankings. It's more of a cumulative thing. Do what stuff you can do and it all builds up on each other. If there are certain techniques that aren't appropriate for your site, then just don't worry about them (except of course for keyword rich text on the page...if you can't do that than you might as well just forget SEO or try and get at least 8000 or so links pointing to you!).

I found headers very interesting, it's alot they can improve to the load speed of you site and that's very important. I don't know if they make better ranking, but if you have a header that tells the spider that the page is recently updated maybe you can have it come visit you more often. There is some catches thou' the server must have HTTP 1.1 to use the cache headers.
