How can I hide my meta tags/keywords if a user selects view --> source?

Why would you want to bother?
Most engines don't read them anyway, and the few that do (Inktomi and Teoma) give it very little weight.
No need to hide it, let the world copy it, it won't do them much good!

Those search engines that take any notice of the meta description tag also display that in the SERPs, so no point hiding that either.
That just leaves the meta keywords tag. Search engines take little notice of it so there's hardly any point having it, let alone hiding it.

So basically it's the content within the body of your pages as well as your page titles that are most important when SEOptimizing?

You do also need to try and get some high quality sites to link to yours, and it's great if you can get your best keywords into the hyperlinks.
Do all those things and you WILL see high rankings!
