If one has a British site aimed largely at a British audience, is it better always to submit to the UK version of major search engines such as Google, or to the main (usually US) version, bearing in mind that most UK users, will probably use the .com rather than the .co.uk versions when doing a search (it's quicker to type ".com" and most people think in terms of ".com" when typing in the name of an organisation in their browser address bar) ?

Don't worry too much about it. All of these options are roughly equivalent:

com only
co.uk only
both
neither
